Same issue as the coffee. I got to write it down somewhere or it's just gone from memory. And hunting down recipes from fifty different cooking websites and remembering which ones I did or did not like is a pain.
Green Arrow is a DC superhero who is famous for being an insane archer, a cynical narrator, and a super liberal. Also, for cooking the meanest chili this side of the infinite earths. One of the graphic novel collections included a recipe for chili in the closing pages. I've literally only ever cooked this recipe of chili in my life. It's really good. I have tweaked it over the years to fit my taste and my budget when I was younger.
INGREDIENTS
-
Canola oil or some other type of neutral oil
-
1.5 lbs ground beef
-
2 tsp cumin
-
2 tsp paprika
-
1 tsp cayenne
-
1 cup diced onions
-
1 chopped green bell pepper
-
4-5 cloves garlic minced, crushed, however you like it
-
1 tsp ground black pepper
-
1.5 tsp salt
-
.5 tsp dried basil, crushed
-
1 tbsp chili powder
-
1 tbsp chili powder
-
1 tbsp chili powder
-
1 16 oz can diced tomatoes (nearest size I've found is 15.5 oz ¯\_(ツ)_/¯), do not drain
-
2 8 oz cans of tomato sauce (or 1 15.5 oz can. I'm not the boss of you)
-
2 16 oz cans of dark red kidney beans, drained, rinsed
-
1 tsp brown sugar
-
.5 cup water
-
tabasco sauce
GARNISH
-
Cheese
-
Oyster crackers/saltines
-
Chopped onions
INSTRUCTIONS
Splash oil into large soup pot to keep beef from sticking. Cook beef on medium heat with cumin, paprika, cayenne, and chili powders. Mix well and continuously with long handled wooden spoon until beef is cooked and the spices are blended evenly throughout. Add onions, bell peppers, and garlic and cook until onions are translucent. Stir in tomatoes, sauce, water, salt, pepper, basil, then simmer for "hours." I've called it after an hour/hour and a half of low heat and it's been great. Either way, stir occasionally. Ten minutes before serving, add beans, brown sugar, and tabasco sauce. Mix well and serve. As with most chilis, it taste even better as leftovers the next day.
NOTE:
If you double the recipe, which I always do, do NOT double the water. Also, the recipe called for 3 different types of chili powder, but you can just use the same kind 3 times. Or just 2 tbsp of the same kind if you are like my younger self. Poor and had a sensitive pallete.
Found randomly on the internet. I think it's a Bobby Flay recipe.
INGREDIENTS
-
Steaks
-
Salt, sea?
-
Ground black pepper
-
Canola oil
INSTRUCTIONS
20 minutes before grilling, remove from fridge and let sit, covered, at room temperature. Preheat grill to high. Brush steaks with oil. Season liberally with salt and pepper. Grill for 4-5 minutes until golden brown. Flip. Grill other side. 3-5 minutes for medium-rare, 5-7 minutes for medium. No other times are given, because no other degree of doneness is acceptable. Tent in foil for 5 minutes before serving.
Another random from the internet. Foodiecrush. I can barely call it a recipe, it's so simple.
INGREDIENTS
-
Corn in husks
-
That is literally it
INSTRUCTIONS
Preheat grill to high. Remove outer layer of husks. Trim off the tuft of threads at the end, but leave the inside unexposed. Place on grill for 5 minutes. Rotate. Grill for 5 minutes. Rotate again. Repeat for about 20 minutes. Make sure to get the uncooked parts of the corn on each rotation. The husks will char. Expect this. As they blacken, they may also curl off the corn. This is also expected behavior.
One day my wife got sick of roasting cauliflower. I searched for a recipe on the internet and found a video on Cook's Illustrated. I like it because it cuts the cook time of cauliflower by microwaving it first.
INGREDIENTS
-
1 head of cauliflower
-
2 cups water
-
.25 cups salt
-
2 tbsp sugar
-
Olive oil
INSTRUCTIONS
Preheat grill to high. Mix water, salt, and sugar until everything is dissolved. Trim off the leaves from the bottom of the cauliflower, then cut the stem flush with the bottom of the head. Cut the head into 6 wedges. Dip wedges into the salgar solution. Reform head on microwave safe plate. Cover with a microwave safe bowl. Microwave for 15 minutes. Remove from microwave and drain excess liquid from plate. Dry cauliflower by either patting it dry or letting it sit for 20 minutes. Brush with olive oil, place on grill. 3-4 minutes on one cut side, 3-4 minutes on the other cut side, 1-2 minutes on the floret side. Place on plate, drizzle with olive oil.
Like the cauliflower, this will use the microwave to cut down on cooking time. The grill finishes it off and adds the flavor.
INGREDIENTS
-
4 potatoes
-
3 tbsp of neutral oil
-
Sea salt for coating
-
Aluminum foil for wrapping
INSTRUCTIONS
Preheat grill to high. Wash potatoes, then perforate all over with fork. Coat with oil, then with salt. Microwave for 4 minutes. Double wrap in aluminum foil. Place directly on grill. Ideally, leave covered for 30-40 minutes, longer if you need to uncover grill frequently to cook other foods. Skewer center to test. Should go all through with no resistance.
